Isernio Pizza Sauce
Everyone should have a great pizza sauce in their recipe repertoire. An excellent pizza sauce needs to be balanced – slightly sweet from good tomatoes, carefully seasoned for just enough flavor enhancement and light in texture to avoid overwhelming the pizza.
In fact, many times Italian red pizza sauces are not even cooked, allowing the
sauce to remain fresh tasting and delicate. This sauce makes a great gift for friends, along with some Isernio sausage.
Pizza tip: When using a sauce on pizza, put a layer of cheese over the dough before adding the sauce. The cheese seals the crust and prevents it from getting soggy which is often the case when sauce is in direct contact with the dough. |

Ingredients |

3 |
tbsps. olive oil, extra virgin |
|
4 |
cloves garlic, fresh, minced |
|
1 |
28-oz. can tomatoes, crushed in puree |
|
2 |
tbsps (2 tsps. dry) fresh basil, minced |
|
1 |
tbsp. (1/2 tsp. dry) fresh oregano, minced |
|
To Taste |
salt and freshly ground pepper |

Method |
|
Place olive oil in a sauté pan over medium heat and, when hot, add the garlic. Stirring constantly let the garlic cook for 45-60 seconds – just long enough to release its aroma and flavors. Do not brown! |
Add tomatoes and let simmer with garlic for 5-6 minutes. |
Stir in basil, oregano, salt and pepper. Remove from heat. Let cool and then store in covered container. The sauce will last for up to one week in the refrigerator. It can also be frozen. |
