Italian Sausage Christmas Eve Chowder

creamy, easy-to-make, tummy-warming soup, perfect for a midnight snack
or light, Christmas Eve dinner. Served with warm toasted or grilled
bread and Caesar salad, a delightful meal is created. |

Ingredients |

1 |
hot Isernio's Italian
sausage links, casings removed |
|
1 |
large onion, diced
3/8-inch |
|
1 |
red bell pepper, diced
3/8-inch |
|
6 |
cups chicken broth |
|
3 |
baking potatoes,
peeled & diced 3/8-inch |
|
2 |
cloves garlic, minced |
|
2 |
cups fresh baby
spinach, cleaned and dried |
|
1 |
cup heavy cream |
|
1/4 |
cup grated Parmesan |
|
|
salt & freshly ground
black pepper, to taste

Method |
Cook
sausage in a large saucepot, crumbling with the edge of a
spoon, just until no longer pink. |
Drain,
add onion and red bell pepper and cook until soft. |
Add
broth, potatoes and garlic, bring to a boil, reduce heat and
simmer until potatoes are tender, about 10 – 15 minutes. |
Add
spinach and cook until wilted. |
Stir
in cream, season with salt and pepper and serve.
4 - 6 servings. |
