Italian Sausage Christmas Eve Chowder

4 servings  | 45 minutes  | 15 mins prep
A creamy, easy-to-make, tummy-warming soup, perfect for a midnight snack or light, Christmas Eve dinner.  Served with warm toasted or grilled bread and Caesar salad, a delightful meal is created.

Ingredients
1 hot Isernio's Italian sausage links, casings removed
1 large onion, diced 3/8-inch
1 red bell pepper, diced 3/8-inch
6 cups chicken broth
3 baking potatoes, peeled & diced 3/8-inch
2 cloves garlic, minced
2 cups fresh baby spinach, cleaned and dried
1 cup heavy cream
1/4 cup grated Parmesan
  salt & freshly ground black pepper, to taste
 
Method
Cook sausage in a large saucepot, crumbling with the edge of a spoon, just until no longer pink.
Drain, add onion and red bell pepper and cook until soft.
Add broth, potatoes and garlic, bring to a boil, reduce heat and simmer until potatoes are tender, about 10 – 15 minutes.
Add spinach and cook until wilted.
Stir in cream, season with salt and pepper and serve. 4 - 6 servings.
