Grilled Sausage Sandwiches with Onions & Peppers
Though a bit messy to eat, this traditional
sandwich is worth the extra napkins! If you want to make the
sandwich a bit more user-friendly, remove sausage from the casings
and form into patties. Grill the patties, switch the hoagies to
an excellent hamburger shaped bun made from focaccia bread, and
you have an updated version of the classic. In either case, this
sandwich is delicious and perfect for hot summer days when the
grill is all you want to fire up.

| Ingredients |
| 1 |
tbsp.
olive oil |
| 1 |
large
onion, cut into 1/2" slices |
| 1 |
red
bell pepper, cut into 1/2" strips |
| 1 |
yellow
bell pepper, cut into 1/2" strips |
| 1 |
green
bell pepper, cut into 1/2" strips |
| 1 |
tbsp.
balsamic vinegar |
|
Salt
and pepper to taste |

Italian Sausages (mild, hot or chicken) |

hoagie
or French rolls

| Method |
Combine sliced peppers and onions in a bowl and coat with the olive oil. Grill on an oiled rack over medium-hot coals for 3-5 minutes, or until tender, turning often.
Or, sauté
in a skillet over medium-high heat on the stove. |
Transfer peppers and onions back to bowl and season with balsamic vinegar, salt and pepper. Cover with foil to keep warm. |
Open rolls, brush with olive oil and grill them face side down for 1 minute. Remove from grill and fill with the
cooked sausage, peppers and onions. Buon
appetito! Serves 4 to 6. |
