large red onion, cut into small wedges |

tbsp. chopped fresh rosemary |

cloves garlic, peeled and crushed |

green onions, peeled & thinly sliced |

Salt & fresh ground pepper to taste |
| Method |
Preheat oven to 350º.
|
Place all the ingredients, except green onions, into a baking dish and mix with hands until coated with oil. Bake for 30 minutes, until potatoes are golden and easily pierced with a fork. |
Remove from oven and transfer to an attractive platter. Garnish with sliced green onions.
Accompany with fresh sliced oranges, pineapple or papaya.
Serves 4 to 6. |
