To camouflage the gray, pasty appearance of a commodity sausage, many producers rely on coloring agents to mimic the appearance of fresh, lean meat. These coloring agents allow the marginal sausage to appear more appetizing. |

We use top grade imported natural casings. Natural casings simply protect and emphasize the natural goodness of high quality fresh sausage. They breathe during the cooking process and maintain an almost invisible characteristic. |
