Pre-Cooking Isernio's Sausages | Baking

Isernio’s Sausage should be handled like other fresh meats.  If you don't use immediately, wrap tightly and store in freezer.

Grill, broil, bake or pan brown Isernio’s Sausage for best results.

Note:  No matter what cooking method is used, it is important to know that the sausages will continue to cook up to an additional 5° - 10°F after they are removed from the heat source.  The trick is to remove the sausages from the heat source at least 5°F prior to the final cooking temperature goal.
 

Pan Browning:
Place Isernio’s Sausage in a skillet over moderate heat.
Add water to cover bottom of pan. Cover and steam until sausages are plump and the liquid evaporates.
Pierce sausages with fork or knifepoint, lower the heat, and brown slowly in their own juices for approximately 8 minutes (they are thoroughly cooked when pinkness disappears). Isernio's Sausages are extremely low in fat. It may be necessary to add 1 teaspoon of olive oil to the pan in order to brown nicely.
Grilling:
Prepare your grill and bring it to medium heat. If using wood or charcoal briquettes, make sure the coals are all white with some spots of red showing.
Oil the grill grid and put it over the coals.
Place sausages on the grill.
Pierce with a fork or knifepoint in several places. Have a squirt bottle on hand to spritz any flare-ups that might occur while cooking.
Lift and turn sausages at 2-3 minute intervals (to assure even browning) for 10-12 minutes. If the exteriors of the sausages are getting brown too fast, move them off to the sides of the grill where the heat is less intense to finish cooking.
Make a slight cut into the center of one of the sausages to test for doneness.  It should be slightly pink in the center.  The sausages will continue to cook up to 5°F - 10°F once removed from the heat.
Broiling:
Pierce the sausages with a fork or knife in a few places.
Place on a rack or broiler, insert and set under a pre-heated broiler unit at 500° about 3-4 inches from the heat source.
Using tongs, carefully turn the sausages once. Total cooking time should be 12-15 minutes. Insert a small sharp knife into the center to test.
Baking:
Preheat the oven to 425°.
Pierce the sausages with a fork or knifepoint in a few places and place them on a baking sheet. Bake for 20-25 minutes turning once, or until the internal temperature is 150°F - 160°F.  A faint pinkness should remain at the center.
