Chicken & Apple Sausages with Roasted Potatoes

 

An attractive brunch dish; great for entertaining.

Serves 4-6

Breakfast Entrées

Shopping List:

1-1/2 lbs. Isernio’s Chicken & Apple Sausages
1 1/2 lbs. medium red potatoes, quartered
1 large red onion, cut into small wedges
2 tbsp. fresh rosemary, finely chopped
(or 1 tbsp. dried)
4 tbsp. olive oil
2 cloves garlic, peeled and crushed
4 green onions, peeled & thinly sliced
Salt & fresh ground pepper to taste

Let's Cook

Preheat oven to 350º.

Place all the ingredients, except green onions, into a baking dish and mix with hands until coated with oil. Bake for 30 minutes, until potatoes are golden and easily pierced with a fork.

Remove from oven and transfer to an attractive platter. Garnish with sliced green onions.  Accompany with fresh sliced oranges, pineapple or papaya.  Serves 4 to 6.
